What you need:
6-8 Peeled Potatoes
1/2 Cup Butter (allergy free)
1 or more TBL Garlic Salt (to your liking)
Pepper to taste.

How to:
Peel, cube, and boil potatos until tender.

Once potatos are fork tender, drain water.
Add butter (more or less if you desire)

Mash with mixer or hand masher
Add Garlic and Pepper to taste.

French Dip – Crock Pot

What you need:
3 lb Round Beef Roast
2 Cans Beef Brooth
2 TBL Worchester Sauce
1/4 Cup Soy Sauce
2 small cans Mushrooms
1 Medium Onion
1 Clove Garlic chopped
1/2 tsp Chili Powder
1/4 tsp Paprika
Ground Cracked Pepper

How To:
Slice onion and pull rings apart and lay in bottom of crock pot on high.

Pour one can of beef broth into crock pot.

Add Worchester Sauce, Soy Sauce, garlic, paprika, chili into crock pot

Add both cans of mushrooms to crock pot.

Cover Beef with cracked pepper to taste.
Pour second can of beef broth into crock pot.

Cook on high for 6-8 hours until beef is cooked through and fork tender.
Shred with two forks and return to crock pot for 1 hour on low.
Serve on bun of your choice toasted.
Dip out some of the “sauce” and serve with French dip to dip your sandwich in.

BBQ Grilled Chicken on Stick – A Kid’s Favorite

BBQ Sauce
Garlic Salt
Skewers

How To:
Weave in and out of skewer.

Smoked Sausage Green Beans and Potatoes – Crock Pot

2 packs of Smoked Sausage (watch for allergens)
5-6 medium potatoes
2 Can Green Beans

Peal and chunk cut your potatoes.
Add to crock pot.
Slice smoked sausage.

Open both cans of green beans undrained and dump into crock pot.

Fill remainder of crock pot with water, add salt and pepper to taste.
Cook on high for 5-6 hours until potatoes are soft and smoked sausage is done.

What you need:
1 Cup Flour
6 TBL Sugar
1 Tsp Salt
1/4 Tsp Cinnamon – (if you don’t want a cinnamon tasting donut – exlude)
1 Tsp Baking Powder
6 TBL Soy Very Vanilla Milk
1/4 Tsp Vinegar
1/4 Cup of Applesauce
1 Tsp Vanilla
2 Tbsp melted butter (watch for allergens)

How To:
Preheat over to 325 degrees
Combine all dry ingredients into Kitchen Aid mixer or similar.
Now add all wet ingredients to dry and mix well.

Once all ingredients are mixed well it time to add them to the donut pan.

Use a 1/4 measuring cup to fill donut section about 3/4 the way full.

Replacement Chart for Help Avoiding Dairy and Egg

We use these replacements a lot. Most of the time in baked desserts. Once you get use to the “change” it becomes very simple. We have followed this for about 9 years now. Most of our desserts are better than using the “real items” such as dairy and egg. Our Chocolate and Vanilla Cake for example is AMAZING!

Elliott Family Chocolate Cake

Every kid needs a birthday cake or cupcakes. When our oldest son was dx’ed with anaphylactic food allergies I had no idea how we would give him birthday cakes. Quickly I learned how to. Now this recipe and our vanilla cake recipe is the only cakes we like. It is so moist and so good. In our opinion the best cakes/cupcakes around!

What you will need:
1 1/2 Cup Flour
1/3 Cup Unsweetened Cocoa Powder
1 tsp Baking Soda
1/2 tsp Salt
1 Cup Sugar
1/2 Cup Vegetable Oil
1 Cup Cold Water
2 tsp Vanilla
2 Tbl White Vinegar (acts as your egg)

How To:
Preheat oven 375 degrees. Yields 1 9×13 pan or 12 cupcakes
Mix together flour, cocoa powder, baking soda, salt, and sugar.
In separate bowl combine oil, water, vanilla.
Add wet ingredients to dry ingredients.
Mix until well incorporated. I use my Kitchen Aid mixer.
Add vinegar and quickly mix for about 1-2 minutes on level 2 mix setting.
It will look like it “foams” or turns white on top, keep mixing until this look isn’t really noticeable.
Bake 25-30 minutes or until tester inserted in the center of cake/cupcake comes out clean.

Frosting: I was able to find a frosting free of all our son’s allergens at a local grocery store. If you are unable to find one locally. I highly recommend Divvies.com we buy a lot from them and adore their allergy free sweets!
