Garlic Spinach, Cheese, and Chives Stuffed Mushrooms

Garlic, cheese, mushrooms does life get any better than that? Why, yes it does! How about a HEALTHY garlic cheese stuffed mushroom!

This is not allergy free.

What you need:
Olive Oil cooking spray
6 Large White Mushrooms cleaned and steams removed
Fresh Spinach Leaves
1 TBL Minced Garlic
1 TBL Chives
6 Triangles of Spreadable Cheese (healthy version)

How to:
Preheat oven to 375 degrees
Line a cookie sheet with foil and spray with olive oil cooking spray.

Add chives, garlic, and cheese triangles to a bowl and mix well

Add spinach leaves to bowl. Tear spinach leaves into smaller pieces

Mix very well.

Spoon cheese mixture into mushrooms

Cook in over for about 15-20 minutes or until top of cheese mixture just turns golden brown

Serve and enjoy!
Great appetizer or side dish!

Quick Fruit Salad

I love fruit of almost any kind. This is a quick easy fruit salad that can be made in advance and the longer it sits in the fridge before serving the better it is!

What you need:
Any fruit you would like.
I used apples, a banana, strawberries, and grapes.
Equal parts of lemon juice, water, and sugar.
For this I used 1/2 Cup of each lemon juice, water, and sugar.

How To:
Peel, Slice, Dice, and Clean your fruits.

Add your lemon juice, water, and sugar into a large bowl and mix well until sugar is dissolved.

Now add your fruits and mix well!

Cover with lid and place in fridge for at least 2-3 hours.

Buffalo Ranch Dip

Buffalo and Ranch! YUP! Can not go wrong with these two together! Easy and fast dip that can be used from chips, crackers, sandwiches, spreads, salads, pitas, veggies and so much more!

What you need:
1 Container Sour Cream (dairy free – watch for allergens)
1 Packet Ranch Seasoning (dairy free – watch for allergens)
1-2 TBL Hot Sauce (your favorite works just fine)

How to:
Empty sour cream into bowl of your choice
Stir in ranch seasoning.

Hot Wings – Crock Pot

This meal is fit for the king of our house! He is a chicken wing maniac!

1 Bag Frozen Wings and Drumlettes
1 Bottle of your favorite Hot Sauce (watch for allergens)
2 TBL Worchester Sauce (watch for allergens)
2-4 TBL Butter (watch for allergens)
2 Garlic Cloves Minced

How To:
Add all ingredients to crock pot and set to high.

Lay frozn wings and drumlettes over mixture.

Stir to coat chicken.
Cook on high for 3-4 hours or until cooked thoroughly.
Serve with Buffalo Ranch Dip on the side (see Dips)

Buffalo Shredded Chicken Pita – Crock Pot

This is by far one of my favorite meals! Set it and forget it! So filling and so good! We had this for the Super Bowl! So good!

What you need:
4-6 Boneless Skinless Chicken Breast
1 Bottle of your Favorite Hot Sauce (watch for allergens)
2-4 TBL Butter (dairy free)
2 TBL Worchester Sauce (watch for allergens)
2 Cloves Garlic minced
1 Packet Ranch Seasoning (watch for allergens)
2 Cups Water (optional) (reduces hot sauce spice just a bit)

How to:
Combine all ingredients into crock pot and set to high.
Lay frozen chicken breast over mixture and mix around to cover chicken.

Pour Ranch Seasoning Packet over chicken and mix around again incorporating ranch into rest of ingredients.

Cook for 4-6 hours or until fork tender and cooked thoroughly.
Remove from crock pot shred with two forks return to crock pot on low for 1 hour.

TIME TO EAT!

Take one Pita cut in half and toast in toaster.
Spread Dairy Free Ranch Dip (see recipe in Dip Section) (or ranch dip of your choice) on interior of Pita.

Turkey and Ham Ranch Wraps

These are so yummy! Perfect for parties and lunches.

What you will need:
Flour Tortilla Shells
Sour Cream (dairy,egg, peanut,tree nut free for allergy concerns) (no allergy: sour cream of your choice)
Ranch Seasoning Packet (dairy,egg, peanut,tree nut free for allergy concerns) (no allergy: your choice)
Oven Roasted Turkey Deli Meat
Oven Roasted Ham Deli Meat
Lettuce (optional)

How to:
Mix 1 tub of sour cream with your ranch seasoning
Spread sour cream/ranch mix over tortilla
Place ham and/or turkey on top of ranch and roll up
Slice rolled up tortilla in half and add a tooth pick to keep it together!
TADA! Done! EASY! PEASY!
