Dry Rub – Rotisserie Chicken Breast – Crock Pot

Nothing like the flavor of a rotisserie chicken. I think I have came close to making a healthier version to get this flavor. Hubs liked it and kiddos liked it so either way it was a success 🙂

What you need:
4-8 boneless skinless chicken breast – thawed
paprika
onion powder
garlic salt
chili seasoning

How to:
Start by rolling foil into balls to cover bottom of crock pot.

I do not measure my spices. I simply add enough to the mixing bowl that I think will be able to cover the amount of chicken breast I am making. If its not enough I make more.

Mix spices together well.
Heavily coated both sides of the chicken breast.

Lay coated chicken on top of foil balls in crock pot. This allows the chicken to be raised up and not sitting in its own juices during cooking creating the “rotisserie” style chicken.

Cook on low for about 4-6 hours or until chicken is fork tender and cooked through.

You may add or alter the spices any way you would like to create the taste you are looking for.

BBQ Pork Chops – Crockpot

Who does not like RIBS! The messier the better! Ribs are one of my signature meals. I typically make them in the oven first then grill. I wanted something different so played around with my crockpot and ribs. My grilled ribs are a favorite of our friends and family. I can not wait to share my crockpot ribs with friends and family now! They turned out amazing! If I must admit better than my grilled ribs!

What you need:
1 Rack of Ribs
2-3 TBL Worchester Sauce
1-2 Bottle of your BBQ Sauce
1 TBL Minced Garlic

How to:
Mix all ingredients into crockpot. Save about 1/4 bottle of BBQ Sauce.

Slice your ribs into 3-4 rib sections and place in crock pot. Do not allow ribs to sit on each other.
Stand them up on edges and against wall of crock pot.

Cover with remaining BBQ Sauce.
Flip rib sections around to cover them in sauce.

Turn on high and cook 6-8 hours.

Preheat oven to broil.
Once ribs are cooked through remove from crock pot and place on foil lined cookie sheet.
Cover ribs with BBQ sauce from the second bottle.
Broil for approx. 10 mintues or until BBQ Sauce begins to bubble and slightly carmelize.

Brown Sugar Candied Carrots – Crock Pot

I love candied carrots! This was simply and so yummy!

What you need:

1 bag Baby Carrots
2 TBL Spoons Butter (allergy free)
1/2 Cup Light Brown Sugar
Pinch of Salt

How To:
Add all ingredients to the crockpot.

Mix well and chop up butter.

Turn on low and cook for 4-5 hours or until carrots are tender.

Spicy Chicken Tacos – Crock Pot

Anything Mexican is my favorite! We love taco night! As we are trying to be a bit more healthy ground beef wasn’t doing the trick tonight! So why not CHICKEN!

What you need:
4-6 Boneless Skinless Chicken Breast
1 Can Diced Tomatoes
1 Cup Corn
1 Cup Salsa
1 Packet Taco Seasoning
2 tsp Red Pepper Flakes
1 tsp Cayenne Pepper

How To:
Turn Crock Pot on high.
Place frozen chicken breast in bottom of crock pot.

Pour taco seasoning over all chicken breast coating them well.

Sprinkle chicken with hot pepper flakes and cayenne pepper.

Add canned diced tomatoes to crock pot. Do not drain them.

Add cup of salsa.

Cook for 6-7 hours.
Shred chicken with two forks and return to crockpot for 30 minutes on low.

Fill tortilla shells to with chicken taco add toppings of your choice and enjoy!

Salsa Chicken – Crock Pot

This is a very low calorie meal and so easy. You can add these to tortillas and bake with a bit of cheese, top rice, eat on crackers, just eat with a fork, eat in lettuce wraps, or like we did tonight in pita shells.

Calorie count: 150 for 1 hot dog (based on the food brands I used) Read your labels for accurate calorie counts. Follow package serving size for accurate counting of calories. I measure everything per plate/bowl based on serving sizes listed on all packages/containers to determine calories.

What you need:
1 Boneless Skinless Chicken Breast per person (frozen)
1-2 Jars of your favorite Salsa
If you like spice add either Hot Pepper Flakes, Red Hot Sauce, or Cayenne Pepper

How to:
Pour about 1/2 jar of salsa into crock pot on high

Lay frozen chicken breast over salsa.

Hot Dogs in the Crock Pot

Making hot dogs in a crock pot is as easy as 1-2-3. The taste is amazing!

How To:
Easy!
Dump your hot dogs in the crock pot turn on low and cook approx. 2-3 hours. About half way through cooking rotate bottom hot dogs to top and top hot dogs to bottom. Do NOT add water.
Once your cook time is up turn crock pot to warm and leave until ready to serve!

Hot Dog Coney Sauce – Crock Pot

Nothing like a Coney Dog or as some call it a Chili Dog. These are a weakness for me and sometimes I just have to have them!

What you need:
1 lb Ground Beef
1 Large Onion Diced
2 oz Cans Tomato Sauce
Sugar
Mustard
Garlic Powder

How To:
Brown ground beef and onion in skillet until thoroughly cooked.

Drain grease and run hot water over cooked ground beef while in strainer to remove excuse fat.
Return to skillet.

Add tomato sauce to skillet.

Mix well.
Now is time to all all remaining ingredients. I do not measure these – I eyeball them and add them to taste. Taste as you go. You do not want it super sweet so do not over do the sugar. You do not want it super sour so watch the mustard. Increase or decrease cayenne and chili powder to achieve the desired spice you would like.
